The International Spanish Paella Championships are heading back to Manly for the second time in a celebration of all things paella.

The free event will include paella connoisseurs from all over Oceania including Australia as well as Bali and Singapore who will compete for the title of Oceania’s best paella chef. Competitors will be instructed to cook one of the three main variations of the dish: meat, seafood or the traditional paella valenciana (Valencian). Paellas will be judged on five important aspects including socarrat (the crispy, bottom layer of paella), colour, flavour, appearance, and texture and consistency.

To smell all the flavours (and maybe even taste them), head to the Manly Food, Wine and Sustainability Festival from 12pm – 4pm on Saturday May 30 on the corner of Sydney Rd and The Corso at Manly.
