A new bar has opened up in Sydney, that is entirely dedicated to hummus.

Simply Hummus has made a home in Darlinghurst. The new eatery serves only one meal, a plate of scrumptious hummus with turmeric-laced pita. They offer a bunch of different toppings, like falafels, spicy tomato salad, Israeli salad, fennel seed and maple syrup caramelised onion.

If you’re wondering if there’s anything different about owner Yoash Dvir’s interpretation of hummus and the luscious chickpea concoction we’re so used to, there isn’t. This just means that more time and care has been put into creating the crème de la crème of hummus.
“Some people like more lemon, less lemon, no garlic, smooth or chunky in texture. Each person has their preference. I like it on the sour side [and] a little smoother than what I make here,” Dvir told Broadsheet.
Dvir made 40 versions of his recipe and had friends taste test until he settled on the perfect hummus. He makes it with soaked chickpeas, tahini, olive oil infused with a secret ingredient, cumin, salt and lemon.
