Following a stint in Tokyo, the acclaimed Copenhagen restaurant Noma will be uprooting and relocating to Sydney for a ten-week period.

Promising to be more of a restaurant in residence rather than a simple pop-up restaurant, owner and chef Rene Redzepi will be bringing his entire restaurant staff of 35 chefs, 30 wait staff, ten admin staff – as well as partners and children – to total close to 100 people moving to Sydney for this project.

Noma Australia’s menu will be inspired by the Australian shoreline and diners can expect shellfish, sea succulents and even sea birds, as well as native spices, herbs and grasses. Seating just 50 diners, Noma Australia will be open for lunch and dinner and is expected to sell out in hours.
