It was announced in March that The Gretz in Enmore would close for a rebranding and refocussing. After just over a month, it has now officially reopened as Wishbone – an eatery dedicated to fried chicken.

Originally, The Gretz was a bar/eatery with a seafood heavy menu and a friend neighbourhood vibe. Now it’s all about chicken, pickles, and boozy milkshakes.

U.S.-born chef Gregory Llewellyn and Naomi Hart – owners of Hartsyard up the road and Wishbone – made the change after deciding to focus on something singular with the venue. The couple have partnered with Blair Joscelyne and Marty Mulholland – of Might Car Mods fame on YouTube for the new venture.

The fried chicken at Wishbone is based on the Harstyard recipe but arguably the best version yet. Earlier in the year, Hartsyard swapped out to a vegetarian friendly menu, so many people are relieved they can still get their hands on the incredible chicken.

The chef told Good Food “We’ve spent $30,000 on a deep fryer from the States. It is smart oil, it filters itself and keeps the impurities out.” So you can expect nothing but the best.

Gretz rebrands as Wishbone

Outside of the fried chicken, the menu is full of classics seen at the owners venues before. Poutine, mac and cheese, as well as biscuits and gravy. On the drinks side, you can expect pre-batched cocktails, bourbon soft serve, and frozen margaritas.

You can expect a different look inside the eatery itself as well. The bar has been replaced by a communal table, and the overall atmosphere is definitely a lot more relaxed.

The venue will still offer table service, with dinner services running from 5pm. The venue is also looking at opening for lunches in the future. Outside of the Enmore eatery, the couple and their new business partners hope to open more branches throughout Sydney.
