You’ve woken up without an alarm for your day off, your filter coffee kit is ready to go, the toast is on, and all that’s needed to complete the ideal start to the weekend is some quick n’ easy scrambled eggs, San Cisco style.

The question is; how does one produce the best possible combination of egg/parmesan/shallot/cherry tomato / whatever-else-might-find-its-way-into-your-pan in order to produce a morning kitchen opus? Here are 4 tips to make the best possible scrambled eggs at home.

1) Cook veggies separately

Something that can turn us off cooking is the amount of prep involved. When it comes to scrambled eggs, however, just leaving your mushrooms & cherry tomatoes whole (and on the vine) is the best possible way to bring out the maximum flavour, as they’ll cook themselves as you go. Set them with some oil in a separate pan on low heat, and revel in the results once it’s complete.

2) Whisk the egg in the pan

A simple tip that can make a world of difference, whisking the eggs in a cup/bowl beforehand causes the eggs to break down and lose their maximum goodness. Break them straight into the pan and whisk over a generous heat, cooking them as they go. And like Risotto – don’t stop stirring!

3) Season the eggs off heat, after cooking

Seasoning the eggs (adding salt and pepper to the mixture) while on the stove can make the eggs watery and runny. Take off the heat when it’s 3 quarters cooked (the heat will remain in the saucepan) and season off the heat for the most balanced taste.

4) To serve – sourdough > other bread

Soggy toast is one of the great mood-killers when it comes to doing a good scramble. Thickly sliced sourdough straight from the toaster and doused in the egg mixture will maintain a far more pleasing crispness that will last you to the end of the meal. Don’t forget to drizzle a bit of oil and chilli sauce (if you’re feeling it) before eating, too
