Once again, KFC has unleashed a new, delicious recipe for us to try while in lockdown, and this time it’s hot, spicy, mac ‘n’ cheese.

Lockdown has sucked, no lie. But one thing that’s been good is trying all the recipes that have been unveiling left and right by using comfort foods as a way of coping for the anxiety this year has brought on.

KFC have been great for this: they’ve shared a brekky avo chicken dish, unveiled a ridiculously stacked parmy, showed us how to make some hot honey wicked wings, and even blessed us with these out-of-this-world chicken nachos.

Now, they’re back at it again, showing us how to whip up some hot, spicy, chicken-y mac ‘n’ cheese, which is certainly going to help warm us up this winter.

Easy as, and only requiring five ingredients, plus a handful of spices, keep-a-scrollin’ to see the recipe, and get your cooking on today, because god knows we need a little bit of entertainment in isolation.

Hot & Spicy Mac ‘n’ Cheese:

Ingredients:

  • KFC Hot & Spicy chicken (Oh yeah, did we mention that it’s back?)
  • 150g pasta
  • ¾ cup milk
  • 1 tbsp plain flour
  • 100g grated cheese (or y’know, more, if you’re a cheese fiend)
  • Fresh herbs
  • ¼ tsp salt
  • ¼ tsp paprika
  • ¼ tsp cayenne powder
  • ¼ tsp mustard powder
  • (Or if you can’t be bothered with the spices, you can just sub in your fave hot sauce)

Method:

  1. Cook pasta until al dente, drain and set aside
  2. Place ¼ cup of milk in a small bowl and whisk in flour ‘til all the lumps are gone
  3. Place the other ½ cup of milk in a small saucepan over medium heat and mix in the spices/hot sauce (adjust the amount depending on how much you wanna spice things up)
  4. Once steam is rising from the milk, whisk in the milk + flour mixture until sauce thickens (should take around 4 mins)
  5. Ohhh this is the good bit. Turn heat down to low and mix in the cheese gradually until all melted.
  6. Remove from heat, stir in the pasta and fresh herbs and serve in a bowl
  7. Top it off with your fave piece(s) of Hot & Spicy (we’re partial to a drummy ourselves)
  8. Channel your inner MasterChef and plate it up for your socials. Remember to tag us @kfcaustralia
